Winemaker

Job Description:
- Oversee day-to-day cellar operations within a high-volume production environment
- Manage the full winemaking process from grape intake to final product
- Ensure production targets, quality standards, and deadlines are consistently met
- Maintain and operate existing cellar equipment, troubleshooting where necessary
- Monitor fermentation processes and ensure product consistency across batches
- Implement and follow standard operating procedures and compliance requirements
- Manage and supervise cellar staff, including scheduling and task allocation
- Coordinate with vineyard and production teams to ensure efficient workflow
- Maintain accurate production records, reports, and documentation
- Oversee stock control of raw materials, additives, and finished products
- Ensure health, safety, and hygiene standards are upheld in the cellar
Qualifications:
- Relevant qualification in Viticulture, Oenology, or related field
- Proven experience as a Winemaker in a production-driven or commercial environment
- Strong technical knowledge of winemaking processes and large-scale production
- Experience working with older equipment and ability to adapt to operational constraints
- Practical, hands-on approach with strong problem-solving ability
- Ability to work within structured processes with limited scope for experimentation
- Strong leadership and team management skills
- High level of organisation and attention to detail
- Ability to work under pressure and meet production deadlines
- Preference for candidates with extensive industry experience (mid to senior level)
- Stable career track record and a long-term, steady career outlook
- Willingness to work in a less modern, non-estate production environment
- Valid driver’s licens
